Corn On The Cob

Corn season has arrived! Each summer I love that first taste of corn on the cob. When I spotted it had arrived at Willow Creek Farms Frankford, Ont. I knew what would be on the menu for supper tonight.

All the hassle of boiling water and using a timer are gone if you use your Instant Pot. Simply pour 1 1/2 cups of water into your inner pot. Place the trivet in and layer your husked corn on top. Stack the corn (as I have in the picture) in different directions to allow for air flow throughout if you can.

Place the lid on your pot. Ensure its sealed and set it to pressure cook for 2 to 3 minutes depending on how tender you like your corn. Do a manual release as soon as the cooking time is complete. Your total time from start to finish is approx. 20 minutes depending on the size of your cooker and the number of ears you are cooking. Enjoy!!

Tips: If you have a smaller pot and are having trouble getting the ears to fit just break them in half.You can cook corn with the husks on, just increase your cook time by 1 minute.
